Spicy Turkey Chili

This is a really simple meal to cook if you are feeding a bunch of people. Serves 6-8.

Cook Time: 45 min

weight loss turkey chili


1 tablespoon of olive oil

1 pound of lean ground turkey

1 tablespoon of minced garlic

2 1/2 teaspoons of ground cumin

1/2 teaspoon of both salt and pepper

1 can of chicken broth

1 can of black beans

1 can of crushed tomatoes

2 cups of frozen corn kernels

1/2 cup of uncooked converted white rice

1/2 cup of green salsa (salsa verde)

1 cup of chopped sweet onion

1/2 cup of chopped cilantro

Toppings: reduced-fat sour cream, green salsa and chopped cilantro


  1.  Heat oil in a large nonstick skillet over med-high heat. Add turkey and garlic and cook, keep stirring to break up meat until turkey is browned. Add cumin, salt and pepper; cook, stirring.
  2.  Stir in broth, beans, corn, rice and salsa. Bring to a boil, reduce heat, cover and simmer, stirring occasionally, 20 to 25 minutes until rice is tender.
  3. Remove from heat; stir in onion and cilantro. Ladle into bowls and serve with toppings.
