Light Turkey Meatballs

healthy recipe turkey meatballsPrep time: 15 min
Makes 35 meatballs


3 slices whole-wheat sandwich bread
1/4 cup reduced fat milk
1 1/2 pounds lean ground turkey
3 scallions or green onions, finely chopped
2 small garlic cloves, minced
2 tablespoons chopped fresh parsley
1 large egg
salt and pepper


1 Preheat over to 375 degrees.Place bread in food processor until fine crumbs form. In a small bowl, mix breadcrumbs with milk; set aside at least 5 minutes.

2. In a large bowl, combine turkey, scallions or green onions, garlic, parsley, egg, 1 1/2 teaspoons salt, 1/2 teaspoon pepper, and breadcrumb mixture; mix gently with a fork.

3. With hands, form mixture into balls, each equal to 2 level tablespoons; arrange in a single layer on a rimmed baking sheet lined with parchment paper.

4. Bake for 35 minutes until browned.

  1. Yummm… I haven’t attempted meat balls since I was 18 living in my first appartment and thought cooking was easy because thats how it looks on tv! 10 Years later I’m still scared by the experience but they have been tempting me lately. Thanks for the motivation!

  2. Gotta love the whole wheat pasta! I’m working on a sauce and a new creation for some stuffed shells tonight.. Almost thought about adding these pretty meaty balls to it too! =)
